I went to Kansas City's Roasterie Coffee and Danny O'Neill for the answer. The bean baron will go step by step through the process tonight at ten, but I do have a tip to pass along to you now.
What is the best way to store coffee beans? Good Question. O'Neill says unless you are going to use them within a few days--ten days at the most--take the beans out of the bag and place them in a vacuum sealed container and store them at room temperature in a dark place, like a pantry. Light robs the bean of flavor, and will dry out the bean. Another tip from O'Neill, do not place the beans in the freezer, it kills the flavor.
